肴肉
镇江的肴肉,又叫水晶肉蹄,皮白肉红,卤冻透明,一块块晶莹发亮,煞是可爱!它肥而不腻,香酥鲜嫩。如果再蘸点姜醋,就更别有风味。它能使品尝者产生好香、好嫩、好酥、好鲜之感。吃肴肉的确是一种特殊的享受。
镇江人吃肴肉有个习惯,清早上馆子,泡壶茶,放碟姜丝,将肴肉蘸着香醋姜丝吃。这就是“三怪谣”中的“菜肉不当菜”。
